KESARI
Kesari is a popular south Indian dish which is prepared using semolina, sugar and ghee. This dish is usually topped with dry fruits and can be consumed both as a breakfast option and as a dessert. The goodness of ghee and semolina makes this dish an ideal choice of nutrition for kids
INGREDIENTS
- ¼ cup of ghee and 2 tbsp of ghee
- 10 cashews
- 1 tbsp raisins
- ½ cup semolina
- 1 cup water
- ¾ cup brown sugar (quantity can be adjusted as per your taste)
- 2 tbsp saffron water
- ¼ tsp cardamom powder
INSTRUCTIONS
- Take a pan and heat the ghee. Add the cashews and raisins and roast it on a low flame till the cashews become golden brown. Keep this aside.
- In the same ghee, roast the semolina on a low flame for 5 minutes or till it turns aromatic and keep aside.
- Boil one cup of water in a large pan or kadai.
- Then turn the flame on low and add the ½ cup roasted semolina.
- Stir continuously till the semolina absorbs water and no lumps are formed.
- Keeping the flame on low, add the sugar and stir well until the sugar dissolves.
- Add saffron water or yellow food color to the semolina and sugar mixture.
- Then add ¼ cup ghee and stir continuously.
- Make sure the mixture is combined well and no lumps are present.
- Cover and simmer for 2 minutes or till rava gets cooked well completely.
- Add the roasted cashews, raisins and cardamom powder to the cooked semolina.
- Mix well till the kesari separates from the pan.
- Serve the kesari hot.
