Thoran is a dry dish typically prepared with vegetables and spices. This is a classic Kerala Stir Fry/Thoran using Beetroot. Beetroot supports our body by boosting immunity, lowering blood pressure, improving blood pressure etc.
Ingredients
- Beetroot: 1 large (finely chopped)
- Shallots: 1-2 (thinly sliced)
- Garlic: 2 pods (crushed)
- Green chilies: 3-4
- Cumin Seeds: 1/4 tsp
- Grated Coconut: 1/4 cup
- Turmeric powder: 1/4 tsp
- Mustard seeds: 1 tsp
- Curry leaves: 1 spring
- Oil: 1 tbsp
- Salt to taste
Preparation
- Using your hands mix thoroughly the chopped beetroots, grated coconut, with turmeric powder, shallots, cumin seeds, garlic, salt, and curry leaves.
- Heat oil in a pan. Add the mustard seeds and when it’s starting to splutter.
- Add the beetroot mixture and sprinkle very little water on the top and cover the pan and cook on low heat, stirring occasionally; After 5 minutes remove the lid and stir-fry for another 5 minutes.
Serve hot as a side dish with rice!
