beetroot stir fry

Thoran is a dry dish typically prepared with vegetables and spices. This is a classic Kerala Stir Fry/Thoran using Beetroot. Beetroot supports our body by boosting immunity, lowering blood pressure, improving blood pressure etc.

Ingredients

  • Beetroot: 1 large (finely chopped)
  • Shallots: 1-2 (thinly sliced)
  • Garlic: 2 pods (crushed)
  • Green chilies: 3-4
  • Cumin Seeds: 1/4 tsp
  • Grated Coconut: 1/4 cup
  • Turmeric powder: 1/4 tsp
  • Mustard seeds: 1 tsp
  • Curry leaves: 1 spring
  • Oil: 1 tbsp
  • Salt to taste

Preparation

  1. Using your hands mix thoroughly the chopped beetroots, grated coconut, with turmeric powder, shallots, cumin seeds, garlic, salt, and curry leaves.
  2.  Heat oil in a pan. Add the mustard seeds and when it’s starting to splutter.
  3. Add the beetroot mixture and sprinkle very little water on the top and cover the pan and cook on low heat, stirring occasionally; After 5 minutes remove the lid and stir-fry for another 5 minutes.

Serve hot as a side dish with rice!
