Tamarind – 1 tsp, or as required

Sesame Oil – 1–2 tbsp

Curry Leaves – a few

Salt – as required

Preparation

  1. Heat a pan over low to medium heat. Add the garlic cloves and gently roast them until they become lightly golden and aromatic.
  2. Add the grated coconut and dried red chillies to the pan. Roast gently for a few minutes, stirring occasionally to prevent burning.
  3. Add the cumin seeds and continue roasting for another minute until the spices become fragrant. Turn off the heat and allow the ingredients to cool.
  4. Transfer the roasted garlic, coconut, dried red chillies and cumin seeds to a blender or food processor. Add tamarind and salt.
