Ingredients
Lamb Shanks – 2

Ginger – 1 tbsp, finely chopped

Bay Leaf – 1
Fresh Coriander leave– a few sprigs, chopped
Salt – as required
Ghee or Olive Oil – 1 tbsp
Water or Stock – approximately 5–6 cups
Preparation
- Heat ghee or oil in a large pot (ideally pressure cooker or multi cooker) over medium heat. Add the chopped onion, garlic and ginger. Sauté gently until the onion becomes soft and aromatic.
- Add the chopped carrots, celery and potato. Stir well and cook for a few minutes.
- Add turmeric powder, cumin powder, black pepper and salt. Mix well to coat the vegetables with the spices.
- Add the lamb shanks to the pot, stir well to coat with spices and add enough water or stock to cover the ingredients.
